Instructions
Season the Cottage Cheese
Combine the cottage cheese and taco seasoning in a medium bowl and stir well until the seasoning is evenly distributed throughout. Taste and adjust the seasoning level if desired then set aside to let the flavors meld.
Warm the Tortillas
Heat a dry skillet over medium-high heat and warm each corn tortilla for about 30 to 45 seconds per side until slightly charred and pliable. Stack the warmed tortillas under a clean kitchen towel to keep them soft and warm.
Prepare the Toppings
Toss the shredded red cabbage with half of the lime juice in a small bowl and let it sit for 5 minutes to lightly pickle and soften slightly. Slice the avocado and prepare the pico de gallo and cilantro.
Assemble the Tacos
Spoon a generous amount of the seasoned cottage cheese filling down the center of each warm tortilla. Top with the lime-dressed cabbage, avocado slices, and a spoonful of pico de gallo.
