Instructions
Blend Tahini and Lemon
Add the tahini and lemon juice to a food processor and blend for 90 seconds until the mixture becomes light and fluffy. This step is key for creamy hummus.
Add Garlic and Spices
Add the minced garlic, cumin, and salt to the fluffy tahini mixture. Blend for another 30 seconds to fully incorporate the aromatics.
Add Chickpeas
Add the drained chickpeas to the food processor. Blend for about 2 minutes, scraping down the sides of the bowl halfway through blending.
Add Water and Oil
With the processor running, drizzle in the ice cold water and olive oil. Blend for another 60 seconds until the hummus is completely smooth and creamy.
Taste and Serve
Taste and adjust salt and lemon juice. Spread into a shallow bowl, drizzle with olive oil, and sprinkle with smoked paprika. Serve with pita or vegetables.
