Add the melted coconut oil, granulated sugar, and vanilla extract to the whipped aquafaba. Stir together gently until the sugar is mostly dissolved and the mixture looks glossy and smooth.

Sift the flour, cocoa powder, baking powder, and salt over the wet mixture. Fold together with a spatula until just combined, then fold in the vegan chocolate chips. Do not overmix the batter.
