Instructions
Saute Garlic and Tomatoes
Heat olive oil in a large pot over medium heat. Add garlic and sun dried tomatoes and cook for 2 minutes until fragrant.
Add Liquids and Pasta
Pour in chicken broth and heavy cream. Stir in Italian seasoning and red pepper flakes. Add pasta and bring to a boil.
Cook the Pasta
Reduce heat to medium and cook uncovered for 12 to 14 minutes, stirring frequently, until pasta is tender and sauce has thickened.
Add Spinach and Cheese
Remove from heat and stir in spinach and parmesan cheese. The spinach will wilt from the residual heat within 1 minute.
Season and Serve
Taste and adjust salt and pepper as needed. Serve immediately with extra parmesan on top.
