Make the Peach Ginger Syrup

Combine 2 cups of water, sliced peaches, sliced ginger, and sugar in a saucepan over medium heat. Bring to a simmer and cook for 15 minutes until the peaches are very soft and the syrup is fragrant. Mash the peaches gently as they cook.

Strain the Syrup

Remove the saucepan from heat and strain the peach ginger mixture through a fine mesh sieve into a bowl, pressing firmly to extract all the flavorful syrup. Discard the solids and allow the syrup to cool.

Brew the Tea

Bring the remaining 3 cups of water to a boil. Remove from heat and add the 4 black tea bags. Steep for exactly 5 minutes. Do not steep longer or the tea will become bitter and astringent. Remove the bags without squeezing them.

Combine Tea and Syrup

Allow the brewed tea to cool to room temperature. Combine the cooled tea with the peach ginger syrup and fresh lemon juice in a large pitcher. Stir well to combine and taste for sweetness.

Serve Over Ice

Fill tall glasses with ice cubes and pour the peach ginger iced tea over the top. Garnish with a fresh peach slice on the rim of the glass. Refrigerate any leftovers for up to 3 days.
