Instructions
Brew the Espresso
Brew 2 shots of espresso using your espresso machine or moka pot. Let the espresso cool for 2 minutes at room temperature so it does not melt all the ice immediately.
Prepare the Pistachio Cold Foam
In a small bowl or jar combine the heavy cream, whole milk, pistachio paste, powdered sugar, vanilla extract, and a pinch of sea salt. Use a handheld milk frother and froth for 30 to 45 seconds until thick and foamy but still pourable.
Build the Latte Base
Fill a tall glass with ice. Pour the oat milk over the ice first, then slowly pour the cooled espresso shots over the back of a spoon to create a layered effect.
Add the Cold Foam
Spoon or pour the pistachio cold foam generously over the top of the latte. The foam should sit on top of the milk and espresso layer and slowly drift down as you drink.
Garnish and Serve
Finish with a light dusting of crushed pistachios or a pinch of sea salt on top of the foam. Serve immediately with a wide straw so you can enjoy the foam and latte together.
