Instructions
Preheat and Prep
Preheat your oven to 425 degrees F. Line a large rimmed sheet pan with parchment paper or lightly grease it with cooking spray.
Combine Ingredients
Add the gnocchi, sliced sausage, cherry tomatoes, zucchini, and bell pepper to the sheet pan. Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss everything together until evenly coated.
Spread and Roast
Spread the mixture into a single even layer across the sheet pan, making sure the gnocchi are not overlapping. Place in the preheated oven and roast for 15 minutes.
Flip and Continue Roasting
Remove the pan from the oven and use a spatula to toss and flip everything. Return to the oven and roast for another 12 to 15 minutes until the gnocchi are golden and crispy and the sausage is cooked through.
Serve
Remove from the oven and let cool for 2 minutes. Garnish with fresh basil or grated Parmesan if desired and serve directly from the pan.
