
Tikka Masala Burrito

Instructions
Marinate the Chicken
Mix yogurt with half the tikka masala spice blend and coat the chicken chunks thoroughly. Let the chicken marinate for at least 15 minutes at room temperature.
Cook the Basmati Rice
Rinse basmati rice until water runs clear then cook in 2 cups of salted water over medium heat with the lid on. Fluff with a fork once all water is absorbed.
Build the Tikka Masala Sauce
Saute onion and garlic in oil over medium heat until golden. Add remaining spice blend and toast for 1 minute then pour in tomato puree. Simmer for 10 minutes then stir in heavy cream.
Cook the Chicken
Add marinated chicken to the sauce and simmer over medium heat until the chicken is fully cooked through and the sauce thickens. Stir occasionally to prevent sticking.
Assemble and Toast the Burritos
Layer rice and tikka masala chicken on each tortilla and top with fresh cilantro. Fold tightly into a burrito and toast seam side down in a dry skillet for 2 minutes per side.
